Ingredients
200g butter
300g good milk chocolate
300g golden caster sugar
120g plain flour
100g coco powder
1tsp baking powder
3 eggs
1 egg yolk
1 teaspoons vanilla extract
Pinch of salt
What to do
Preheat the oven to 170°C | 325 °F | Gas Mark 3
Line a 25cm square tin with baking sheet
Combine the butter and chocolate in to a glass or metal bowl, and place over a saucepan of simmering water. Stirring constantly until melted and smooth
(Tips: you can also melt the chocolate and butter in the microwave in short 30 seconds bursts and stir in)
In a separate and large mixing bowl, whisk together the eggs, egg yolk, caster and vanilla until light and fluffy
Gradually sift in the coco powder, flour, baking and salt and beat until thick and smooth
Whisk the melted chocolate and butter in to the flour mixture until the mixture is thick and smooth
Pour the brownie mixture into the prepared tin and bake for 30-35 minutes
Set aside to cool down for 30-45 minutes and then cut into squares with a sharp knife and ready to serve.
